Sitting in the beautiful back garden of an oyster-and-absinthe bar (is there any other kind of bar in Williamsburg?), we stopped worrying and laughing about the rat running around in the bushes long enough to realize our oysters were taking forever to come out. Someone asked the waiter about the bivalves, and he responded by saying “Sorry, but we shuck our oysters by hand here, so it might take a bit longer than you’re used to.”
